Photo log October 2015 - Meals for Fall and cool evenings and sunny days.

A series of meals I've made this month.  The weather is getting cooler and comfort food is in order.



Tonight was inch thick pork chops pan seared and baked in an apple/pear/brown sugar and butter sauce. 
Paired with a fresh salad with goat cheese, red onions and blueberries, topped with a blood orange oil and red wine vinegar dressing.   Sweet, warm and satisfying.



Breakfast on these cold mornings is almost always Irish oatmeal  (a smaller cut than American oats),) with brown sugar, honey and cinnamon  -  and sometimes blueberries.



Eggs from my Neighbor Tera's chickens, delivered every two weeks.  Door to door hens eggs.



Resulting in a perfect two egg omelette -  dubliner cheese, curry and a dash of parsley.  Simple perfection on a sunny morning.




Or sometimes a scramble. This one with Jack cheese, red onion,  red bell pepper, mint, parsley, and curry powder.



Prime rib dinner. Coated in garlic,parsley from the garden, cracked black pepper and olive oil. Then slow cooked to medium rare, listing heavily toward rare.  Perfection straight out of the oven



And a great lunch the next day.  Prime rib sammich with dijon mustard, creamed horseradish, some pepper jack cheese and a sliver of dill pickle on toasted bread with an apple and pear sauce from the garden.  Pretty much the best lunch in the history of the world.




And finally my signature dish (these days):  Artichoke heart, fennel and mint risotto. It's the closest thing to crack that I know of. 




I like Fall.  It's time for stews and soups, beans and hearty, savory meals.
